Curried Mushroom & Cashew Pate

This recipe takes specialty items, but is well worth it! It is really delicious on top of bread, crackers, or vegetables like sliced zucchini.

3 Tablespoons margarine

1/2 cup onion, minced

1 lb mushrooms, finely chopped

1 large garlic clove, pressed

2 teaspoons curry powder

1/4 teaspoon ground  cumin

1/4 teaspoon salt

1 cup roasted unsalted cashews

1 Tablespoon safflower oil

1 Tablespoon medium dry sherry

Coriander, chopped for garnish


-Melt margarine in large skillet, add onion and saute for 2 minutes

-Add mushrooms, garlic, curry, cumin & salt

-Saute 8-10 minutes until mushrooms are very soft

-Transfer to food processor and blend, add cashews, oil, and sherry

-Blend until very smooth.
